We at Usegatan respectfully call the broth made from various dried fish such as mackerel, saury, sardine, and bonito from Ushibuka Town, located at the southernmost tip of Amakusa, "Ushibuka Dashi." It is additive-free and uses low-hydration noodles from Araki Noodle Factory.
