Indian and Pakistani Specialties What is Tandoor? The tandoor is an essential element in Indian cuisine. It is an oven, made of terracotta mixed with straw and sun-dried cane sugar between 35 and 55°. It is shaped like a jar 2 m in circumference, 80 cm high and weighing 65 kg. To maintain sufficient and constant temperature, this jar is placed in a brick cradle containing a large volume of sand. This oven is continuously heated with charcoal. Grilled items (fish, chicken, meat) arranged on skewers are placed vertically in the oven. Breads are plastered against the oven walls for a few minutes...
