We work with Metzger butcher shop for our veal and beef. Our veal is from a top-quality selection: Ségala Label Rouge, IGP Aveyron, approved milk-fed veal. Our beef is Charolais and Normande breed. Our chicken is Périgord Blanc breed, IGP Fermier Label Rouge. For seafood, we have chosen OSO, the "Sustainable and Responsible" certified seafood gastronomy brand, as well as the MSC label. Our desserts are homemade. We work with one of the oldest chocolate makers in France for our desserts: Maison Bonnat. Our pure Madagascar vanilla bean is exclusively Organic AB.
