It all started 30 years ago... I grew up in a village in northern Lebanon between vineyards, lemon trees, and olive trees. On Sundays, the whole family gathered around a meal prepared with produce from our garden, lots of olive oil, and a jug of Arak. There was some discussion, a lot of arguing, sometimes laughter, often shouting! 30 years later, I decided to relive this story every day, through the flavors of my childhood. Healthy, simple, but generous cuisine, prepared with fresh ingredients and a lot of love. Zaytoon (the olive tree) is my way of sharing with you, for the space of a meal, a little piece of my Lebanon! Firas

Semi-firm cheese, originating from Cyprus, grilled until golden brown. It has a characteristic slightly rubbery texture and a salty taste. Served here with olive oil and herbs.
