Quintessence

Our restaurant exclusively offers a single omakase (chef's choice) course. This is due to our "commitment to ingredients." The optimal time to enjoy ingredients is fleeting. Whether it's something best fresh or something that improves with aging, we must meticulously manage our ingredients to serve them at their peak. Furthermore, it is crucial to prepare dishes on the same day they are made, rather than carrying them over to the next. We believe the quality of our cuisine lies in these fundamental aspects. For these reasons, we have chosen to offer a completely omakase course. "Produits" (Ingredients), "Cuisson" (Cooking), "Assaisonnement" (Seasoning) We believe these three processes are paramount. With these in mind, we aim to incorporate elements of humor and poetry into our dishes to ensure you can truly enjoy your meal. We hope you will feel the messages conveyed through the dishes we serve.
