Based on Niigata-Tsubame Sanjo ramen with over 90 years of history, this dish features a soup carefully made from select niboshi (dried sardines) chosen for their origin and size, paired with high-quality domestic pork back fat and fragrant, chewy, medium-thick noodles made from 100% domestic wheat. We aim to serve a refined bowl that transcends the heavy and greasy image of back fat, by creating a crossover of the umami of niboshi and the sweetness of back fat. Garlic is not used.
