Kyushu Nakamura Beef "Takumi no 5%" This is a female Kuroge Wagyu beef that has grown for the longest time in the rich natural environment and water of Kyushu, giving birth to superior lineage bulls. It is then fattened to perfection by skilled hands at Nakamura Ranch, selected by a "Takumi" (master craftsman), and shipped. Only 10% of all Kyushu Nakamura Beef are selected by Takumi, and only 50% of those are provided to our restaurants. This is certified as "Takumi no 5%" (5% of the Takumi-selected beef).
Kai-no-mi (Flank Skirt Steak)
