We work with the Metzger butcher shop for our veal and beef. Our veal comes from a top-quality selection: Ségala Label Rouge, IGP Aveyron, approved milk-fed veal. Our beef is of the Charolais and Normande breeds. Our chicken is Périgord white, IGP Fermier Label Rouge. For seafood, we have chosen OSO, the "sustainable and responsible" certified seafood gastronomy brand, as well as the MSC label.
