Because making Yum Yai takes a long time and requires many ingredients, as described in the poem "Yum Yai" by King Rama II, "Yum Yai contains all sorts, arranged on the plate, a great abundance." Yum Khamoi is therefore a simplified version of Yum Yai, but equally delicious.
