Budae-jjigae is a variation of kimchi-jjigae made with army base meat that originated from US military bases. The 'kkulkkul-i-juk' (pork gruel), boiled with protein chunks salvaged from the food waste of US military bases after the war, was called UN-tang or Yang-tang (Western soup). However, kkulkkul-i-juk is not the ancestor of budae-jjigae. Kkulkkul-i-juk was a survival food for those who had to eat anything to survive, such as orphans, displaced people, and day laborers. Budae-jjigae is a dish made with Korean cooking methods using meats like ham, sausage, and Spam that originated from US military bases. Processed canned meats that were past their expiration date were often used without being discarded. While the prevailing theory is that budae-jjigae originated in Uijeongbu in the early 1960s, similar dishes existed in the early 1960s. "Mothers have a duty to provide easy and nutritious food for their growing children. We hope ham and sausage are used more often on our tables. It's good to finely chop ham and add it to kimchi-jjigae. It's also good to chop ham and sausage, stir-fry them in a pan, and pack them as side dishes for lunchboxes. Budae-jjigae is a complex, popular dish born from the addition of ingredients like American military rations such as ham and sausage, and ramen noodles, to traditional Korean dishes like kimchi and jjigae.
