We procure fresh offal every day. Depending on the individual cut of the day, we recommend either tare (sauce) or salt seasoning. If you cannot specify tare or salt, we will serve it with the chef's recommendation. We cannot change the world, but we cut meat with care so that it becomes an important restaurant for our customers, their families, and loved ones.
