Directly from Kagoshima Nanshu Farm Rules for being called Kagoshima Kurobuta ◆ Kurobuta does not mean the entire body is black. Kagoshima Kurobuta refers to pigs with white spots on their four legs, snout bridge, and tail tip, totaling six white spots, known as "Roppaku." In the Meiji era, the British Berkshire breed, which has Roppaku, was introduced and crossbred with native black pigs to create our unique Roppaku. Kagoshima Kurobuta is defined as a Berkshire breed with Roppaku, raised, fattened, and produced within Kagoshima Prefecture. ◆ Must be fed a diet containing 10% sweet potato for at least 60 days during their growth period. ◆ Must be raised for over 250 days.

Shabu-Shabu with Dashi Broth At our restaurant, you can enjoy shabu-shabu by dipping the meat in our original "dashi" broth. <Steps> ① Add plenty of shredded leeks to the hot dashi broth. ② Mix in yuzu pepper to your liking. ③ Drop sliced garlic into the boiling water in the iron pot, pick up the Kurobuta shabu-shabu meat with chopsticks, dip it in the hot water, and once the meat turns white, dip it in the dashi broth and enjoy. ④ The refreshing and moist umami and flavor of the meat, the aroma of yuzu pepper, and the crisp texture of the shredded leeks create a harmony of flavors.
