Beau Paysage

Hokuto City Vineyards spread across the highlands of Hokuto City, about 800m above sea level, overlooking the Yatsugatake and Southern Alps mountain ranges. Cultivated by Hidefumi Okamoto since 1999, various grapes, mainly Merlot, are grown in a trellised system without any chemical fertilizers. Grass cultivation, where the ground cover is left to grow naturally, uses small amounts of environmentally friendly pesticides. Both cultivation and winemaking are based on manual labor. "We don't force the wine to taste as the winemaker intends; we merely assist the direction the grapes are heading." Accepting nature as it is, we carefully craft the wine of the year.
