Established in 1923 As a brewery in Shimonoseki, the city of the Meiji Restoration, we continue to innovate daily while preserving tradition. We were early adopters of sake brewing by employees and are the only brewery in the prefecture that brews year-round, crafting "seasonal Japanese sake" to be enjoyed throughout the four seasons.

Boiled green tea soba noodles are placed on hot roof tiles and eaten with sweet and savory beef, shredded egg, and several kinds of condiments with a special soy sauce-based broth. The crispy and chewy texture of the noodles is an unprecedented taste. It's so delicious you'll exclaim, "Buchi! Umaii" (So delicious!). [Buchi's Green Tea Soba is Homemade] Made with domestic wheat, domestic buckwheat flour, and domestic matcha. By making the noodles about 1.5mm thicker than regular green tea soba, the surface in contact with the tiles becomes more fragrant, allowing you to enjoy both the crispy and chewy textures of the noodles.
